きりたんぽ鍋 (きりたんぽなべ / Kiritanpo Nabe)
Akita regional hot pot
Kiritanpo Nabe is a traditional hot pot from Akita Prefecture, featuring grilled mashed rice skewers called kiritanpo. It’s simmered with chicken, burdock, and mushrooms in Hinai chicken broth, where the rice absorbs the rich umami flavor.
When / How to Eat
Commonly shared with family or friends during cold seasons. Add the kiritanpo just before eating to keep it firm, and finish with rice porridge using the remaining broth.
Cultural Background
Originating in northern Akita, it began as a portable meal for hunters and farmers. Today, it’s celebrated as one of Akita’s signature dishes across Japan.
Cautions
Do not overcook the kiritanpo, as it can fall apart. It tastes best when eaten freshly cooked.
