Cultural Background
Katsuobushi has been valued since the Edo period as both a seasoning and a luxury gift. Makurazaki in Kagoshima remains a leading production area.
Cautions
Keep dry and airtight, as humidity ruins its flavor. Freshly shaved flakes have the best aroma.
