Amazake is a naturally sweet drink made from fermented rice. Despite the name, many versions are non-alcoholic and it’s known as a “drinkable IV” for its nutrients.
When / How to Eat
Traditionally served warm during New Year or festivals, and sometimes chilled in summer. Ginger is sometimes added.
Cultural Background
Amazake has long been served at shrines during New Year. In the Edo period, it was also enjoyed in summer for health benefits.
Cautions
Some amazake made from sake lees may contain alcohol. Not recommended for children or before driving.
